ENOKIDO Saikyo Miso is a traditional Kyoto-style white miso, prized for its mild flavour and lower salt content. It is especially well known for dishes such as Salmon Saikyo-yaki, and is ideal for cooking, sauces, marinades and creative dishes.
Unlike our other misos, which are long-fermented everyday misos for soup, this Saikyo miso is lightly fermented and naturally milder, with a smoother, creamier taste. While not suitable for miso soup, it can be used in everything from pasta and dressings to desserts and even ice cream.
Our miso is vegan-friendly, non-GMO and unpasteurised, providing a natural source of live cultures.
As this miso is naturally fermented and unpasteurised, online orders are packed in a special breathable food-grade bag with a valve to allow the product to continue maturing. On rare occasions, a small amount of liquid may escape during transit.
