Organic Barley Miso

Certified organic soybeans, certified organic barley, sea salt.

Fermentation time: 6–12 months

ENOKIDO Barley Miso is a naturally fermented miso handmade in Sydney using 100% organically grown Australian ingredients. Inspired by traditional Japanese mugi miso, it has a warm, savoury flavour with gentle sweetness from the barley and a slightly rustic character.

This miso is ideal for making miso soup, vegetable broths and everyday cooking. Its balanced flavour makes it especially well suited to root vegetables, leafy greens, mushrooms and hearty dishes.

Our barley miso is high in protein, vegan-friendly, non-GMO and unpasteurised, providing a natural source of live cultures.

As this miso is naturally fermented and unpasteurised, for online orders we use a special breathable food-grade bag with a valve to allow it to continue maturing. On rare occasions, some liquid from the miso may leak from the valve during transit.

Please note: glass jars are not available for online orders.
